Award Winning Seafood Chowdah
As prepared in the kitchen of the Brothers of Mercy Sacred Heart Adult Home
Recipe by: Jesse Burns and Keith Zephno
Makes about a gallon of chowdah
1/4 lb. flour
1/4 lb. plus 1 Tbl. butter
3/4 lb. shrimp
1/4 lb. lump crabmeat
1/4 lb. canned clams with juice
1 qt. clam juice
1/2 gal. seafood or lobster stock
1 1/4 lb. onions, diced
3/4 lb. celery, chopped
1 red pepper, roasted and chopped
1 1/3 lb. red potatoes cut into 1” pieces and boiled separately
1 med. bunch parsley leaves, chopped
1 pt. half and half
1 pt. heavy cream
1 c. dry sherry
1/2 Tbl. Old Bay seasoning
1/2 tsp. cayenne pepper
1/4 tsp. dry mustard
1 dash Tobasco
1 dash Worcestershire
1/4 Tbl. white vinegar
salt and pepper to taste
1. Saute onion, celery, and red pepper in butter in 1 Tbl. butter
2. Put sauteed ingredients into a large stock pot and add seafood or lobster stock, clam juice, and seasonings.
3. Add half and half, heavy cream, sherry, and vinegar to stockpot and warm.
4. Melt 1/4 lb. butter in a saucepan and slowly add 1/4 lb. flour. Stir until it is a golden brown. Add to stockpot.
5. When the cowdah has thickened, add clams, shrimp, and crabmeat and potatoes.
6. Finish by adding Tobasco, Worcestershire sauce, salt and pepper.
7. Invite friends and family to share!

Many WNY families will be warmer because of all the hundreds of thoughtful donations. The Nursing and Rehabilitation Center has donated the most items for several years. It's especially gratifying to be the "winner and still champion" when the donations benefit those in need!

Brothers of Mercy wins chowder challenge again!
Congratulations, Brothers of Mercy Campus! The wonderful seafood "chowdah" prepared in the Sacred Heart Adult Home kitchen took second place in the People's Choice category during the annual Town of Clarence Winterfest! Better yet, it took TOP honors in the Judge's choice category! This is the third time that the Brothers of Mercy chowder was named The Best. This year the competition was more challenging than ever with several organizations submitting delicious entries. A well-deserved round of applause to our Chowdah Kings Jesse and Keith and thanks to all those who voted for the Brothers of Mercy chowder. collecting sweaters and sweatshirts for those in need
As you put away the sweaters you received as Christmas gifts, you may have discovered that you need to get rid of a few older sweaters to make room. Don’t throw them away! They can help keep many Western New Yorkers in need a little warmer this winter.
Residents of the Brothers of Mercy Senior Apartments, 10500 Bergtold Road, Clarence, are collecting sweaters, sweatshirts, and warm vests for families whose budget may not include these warm items. These items will be collected throughout January and then taken to a distribution center in Buffalo. All sizes are welcome.
A collection box has been placed in the building’s entrance. For more information call 759-7604.
Coleman Named Employee of the Month
At Brothers of Mercy Nursing and Rehabilitation Center
A Cheektowaga resident has been named Employee of the Month at the Brothers of Mercy Nursing and Rehabilitation Center in Clarence. Nursing department scheduling coordinator Kathy Coleman is the January honoree at the nonprofit senior care facility. Coleman has been an employee of the Brothers of Mercy Nursing and Rehabilitation Center for nearly 22 years.
“Kathy is extremely dependable and works well with everyone,” it was noted in the announcement. “She not only coordinates schedules, but can handle any task put before her. Co-workers, residents, and families know they can depend on her.”
Coleman was presented a check and granted use a reserved parking space throughout the month.

BROTHERS OF MERCY AND D’YOUVILLE CREATE JOINT CAMPUS FOR NURSING CURRICULUM
First Satellite Campus for D’Youville
BUFFALO, October 31, 2011 – D’Youville College and the Brothers of Mercy (BOM) have entered into an agreement that will establish a satellite campus at the Brothers of Mercy Bergtold - Ransom Road campus in Clarence. It will focus on nursing, selected other curriculum, and will offer classroom instruction, on-site clinical placements, and geriatric research.
A signing ceremony with Sister Denise Roche, president, and BOM leaders will take place tomorrow, Tuesday, November 1, 2011, 11:00 a.m., at the Brothers of Mercy Campus in Clarence. (10570 Bergtold Rd., off of Ransom Rd.) |

Classes will begin in January 2012 and will meet once per week at 4:00 p.m. to accommodate working individuals and students.
The satellite program will be marketed to nurses who have an associate degree in nursing and want to earn their bachelor’s degree.
Classes will be held in existing classrooms and a nursing laboratory at the Ransom Road campus and will be taught by D’Youville nursing faculty. “This will provide an excellent opportunity for residents in the Clarence and surrounding area to complete their four-year degree in nursing at a convenient location and with excellent, experienced faculty,” says Dr. Judith H. Lewis, dean of D’Youville’s School of Nursing.
This will be the first satellite campus in D’Youville’s 103-year history and the college plans to add their MBA and adult professional development programs to the Clarence site, according to Dr. Arup K. Sen, vice-president for academic affairs.

The program should be of interest to students studying nursing at two-year community colleges in the Clarence- Amherst- Batavia area as it will be convenient for them to transfer to the D’Youville program at Brothers of Mercy and earn their four-year nursing degree, according to officials of both institutions.
“Our campus will be ideal for nursing students as they will have first hand access to our skilled nursing, rehabilitation services, adult care and independent living programs that we offer as part of their education,” said Nicole DeKay, RN, director of nursing at Brothers of Mercy. “We already have a number of our nursing staff interested in the D’Youville-Brothers of Mercy program.”
The 240-bed facility received the highest rating from the federal government’s Centers for Medicare and Medicaid Services.
